This coffee is special for so many reasons.
Monastery has been buying coffee from the Zelaya family in Guatemala since they began roasting five years ago.
The Zelaya family has been growing coffee on the Santa Clara Estate for over 100 years, spanning four generations. What a privilege it is to share the story of their farm with you. It resonated with me because they are focused on sustainability and because they treat all of their employees like family. They have several initiatives to help their community, including the onsite school for the children of employees. And they help provide skills to the women workers, such as jewellery making, so they can find employment outside of the coffee season.
Every coffee cherry on this beautiful farm is hand picked. The natural processing of this Santa Clara coffee is not common in Guatemala. The combination of processing and location makes for a uniquely balanced coffee expressing both fruity and chocolatey tasting notes, with the natural processing taming the usually high acidity and bringing a sweetness to the cup.
